Sure it's messy, and might take some more time, but the memories made + the satisfaction any little ones will feel when the finished product emerges from the oven will be priceless! These mini bundt cakes are simple to make and decorate, so it's a good one to start with in our opinion!

Rub together lemon zest and sugar. Mix together with flour, salt + baking powder. In another bowl, beat eggs, greek yogurt, vanilla, lemon juice, oil and stir until combined. Gently combine wet + dry ingredients. Fold strawberries in the batter. Divide into greased mini bundt pans. Bake at 350° for 30 minutes.
